Ingredients:
1 cup pastina pasta (any small pasta should work)
2 tablespoons olive oil
1/2 cup cubed chicken breast (1-inch cubes)
1/2 cup diced onion (about 1 small onion)
1 clove garlic, minced
1 (14.5-ounce) can diced tomatoes with juice
1 cup shredded mozzarella
1/4 cup chopped fresh flat-leaf parsley
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup bread crumbs
1/4 cup grated Parmesan
Directions:
1. Cook chicken and cook pasta until done.
2. In skillet saute onions and garlic with olive oil and add chicken.
3. Place the chicken mixture into a large bowl with the cooked pasta, the canned tomatoes, mozzarella cheese, parsley, salt, and pepper. Stir to combine.
4. Place the mixture in a buttered 8 x 8 x 2-inch baking dish.
5. In a small bowl mix together the bread crumbs as well as the Parmesan cheese, and sprinkle over the top of the pasta mixture.
5. Place small bits of butter on top.
6. Bake until the top is golden brown (approximately 30 minutes).
Tip: I also added some jalapeño peppers to the mixture.
