Today, it's misting rain, and snow is still on the ground. It's a great day to have leftover chili for lunch, and I'm also enjoying this new lockscreen that I have on my phone.
What truth is in the verse that's on this lockscreen!

This is so, so true.
The Lord is always there for us, we just have to make space for Him and open the door of our heart to Him.

While there's still some snow on the ground and icicles are still hanging around, we're getting back into our daily routine of things. It's a workday, and the sun is shining and the icicles are starting to melt.

Ingredients:
2 pounds lean ground beef
1 package (Slow Cooker) Chili Seasoning
2 cans (14 1/2 ounces each) diced tomatoes, that are undrained
2 cans (16 ounces each) kidney beans, drained as well as rinsed
1 can (15 1/2 ounces) tomato sauce
1 Onion, diced
1 Onion, diced
Directions:
1. Cook and brown ground beef or turkey in a large skillet. Drain the fat once cooked.
2. Place cooked beef, seasoning mix, tomatoes, tomato sauce, onion, and beans in the slow cooker. Stir until it's well mixed, and then cover.
3. Cook 8 hours on Low or 4 hours on High. Stir before serving. For best results, don't remove the lid while cooking in slow cooker.
Serves: Makes 8 servings.

So today... as I'm scheduled to go into work a bit later, I'm enjoying a warm cup of coffee, and taking in this snowy day.
I'm not sure that Maisy really likes the snow all that much. She definitely isn't about staying out in it very long!
Our Bo is just like a big kid in this snow.
After work, I'll have a big pot of chili made, and we will be awaiting the next snow that the weathermen are telling us we will be getting over the weekend.
As I try not to stress about the snow covered roads...this verse is fitting for today. I opened up the Our Lifelong Stories app to read the Daily Bible Verse, and this pops up for the verse today. And, with the snow covered ground it just fits my day!
And they that know thy name will put their trust in thee: for thou, Lord, hast not forsaken them that seek thee. -Psalm 9:10 (KJV)
Truth is, my husband is flying back from Texas today. So I've had to put my big girl shoes on, and drive in this snowy mess. Yes, snow is beautiful (and slippery)! This girl is excited to see her husband, but first there is a workday to get finished, so I gotta drive. Yuck!
So when I see this verse, I'm reminded of the Lord's faithfulness.
The Lord never fails me!

Monday life is happening here today! I'm off with the kids today, and a clean house and clean laundry is happening today.
Happy Monday!
Our son's first words to us this morning was, "it snowed." Why, yes, yes it did!
There's just something about the first sight of snow that brings out the kid in us, ya know!
So, today we'll sit by the fire. We'll have coffee and hot chocolate. We will have Chicken Fajitas for dinner. We'll even have worship music playing at our house on this Sunday.
And, we will be thankful for these!
Our day has included lots of shopping. Then we ate yummy food...our dinner consisted of steak, chicken, and ribs. Then we went to try out the new movie theater. I love spending evenings just like this! They each definitely have my heart strings!
And...because getting late evening coffees with my daughter is one of my fav things to do!
And...because sharing this life with my guy is the best! We had a great time at the movies tonight!
And...because I'm grateful for these!

It's a rainy and wet Friday, but I'm looking forward to the 3 day weekend that awaits me for the next three days!
Chicken (with Mushroom Sauce)
2 to 4 skinless chicken breasts
2 cups mixed mushrooms, sliced
2 tablespoons minced shallots
1 to 2 tablespoons butter, divided
½ cup chicken broth
2 tablespoons whipping cream
2 teaspoons fresh thyme leaves
½ lemon, zested
Chopped parsley (for garnish)
Instructions
1. Bake chicken until done.
2. Add 1 tablespoon of the butter to a skillet and melt over medium heat.
3. Add the mushrooms and shallots to the skillet and cook for 4-5 minutes until softened, while stirring often.
4. Add the chicken broth to the skillet, bring to a boil, and reduce to half. Add the whipping cream, thyme leaves and the last tablespoon of butter. Stir to mix/combine well, and add the lemon zest.
Serve with the mushroom sauce over the chicken breasts. Garnish with the chopped parsley, more fresh thyme leaves and additional lemon zest if so desired. I even added some Parmesan Cheese for an extra flavor!

It's oatmeal for breakfast today for this girl. I've been eating right, and going to the gym with my husband, and I'm happy to say I'm making progress. I weighed myself today, and discovered that I've lost 3lbs.!

So...we have a light dusting of snow from last night.
Our Maisy...something tells me she don't like this dusting of snow...perhaps, it's because she was ready to come back inside almost as soon as I let her outside this morning.

In the fireplace that is! When Bo first saw the flames, he really didn't know what to think about it. Now, he's relaxing by the fire (and we're loving it as much as he is).
So, this is for dinner this evening at our house: Honey Mustard Chicken (which can be grilled or baked, and since it's a cold and snowy day, I decided I'd bake it today).
Ingredients:
6 Boneless Chicken Breasts
3 Tablespoons of Mayonnaise
⅓ Cup Dijon Mustard
¼ Cup Honey
1½ teaspoons Soy Sauce
1 tablespoon Lemon Juice
Instructions:
1. Mix together the Dijon Mustard, Honey, Soy Sauce, and Lemon juice.
2. Remove 3 tablespoons of this mixture, and set it aside for later (I chose to refrigerate mine).
3. Mix the chicken breasts with the marinade and let sit up to 4 hours in the fridge
4. Preheat the grill to medium or preheat the oven to bake the chicken and grill or bake the chicken until completely cooked.
Sauce: Add 3 tablespoons of mayonnaise to the reserved sauce (that you set aside in step 2).
Drizzle over chicken breasts and enjoy this dinner with your family!
This evening, we're having this with baked sweet potatoes (with butter and brown sugar) and corn.
Yummy, yummy stuff!
This Sunday...
Two cups of coffee not in a to go cup on this Sunday morning, it's going to be a great day!
And...just because he's awesome like that, my guy is putting together our new fireplace! Might I mention, I've always wanted a fireplace!
While our fireplace is being put together, our 15 year old plays with the box...it's her "spaceship."
He decided to wear one of the new shirts he got for Christmas. I wanted to take a picture of his cute self before school, and he, of course, insisted that his dog had to be in the picture. Their friendship is awesome!

I so love this! To me this means each and every single day is a new day, and we can do wonderful things living for the Lord's purpose. Each day is filled with purpose, and each day we can live for His goodness!

So, we brought our big guy in to stay warm on this cold day. Our son had to step outside for a minute or so, and this one decides to wait at the door for him. Best friends, I tell ya!
My husband has been wanting to show me these sheep that's down the road from us for a few days, I'm so happy we got the chance to see them today!
